Northern Exposure

Nordic cuisine's previous culinary claim to fame was the Muppet Show's Swedish Chef. The sketches began with him in a kitchen waving some utensils, while singing his signature song in mock Swedish-something to the effect of "Bort, bort, bort!"

The Finnish chefs, Matti Romppanen and Tero Siltanen who just opened Routa, Barcelona's first restaurant offering Nordic cuisine, know that singing in gibberish and cooking with a tennis racket won't necessarily cause a revolution.

Instead, the duo, coming from Helsinki's two Michelin star Chez Dominique, have opted to go back to the basic traditional Nordic food preparation techniques, such as smoking, salting and pickling, while relying on quality and organically grown ingredients found in cold and exotic Northern climates.

This nouveau-back-to-the-roots Nordic cuisine is causing a stir in the restaurant world and the results are way beyond any pork-potato-herring smorgasbord. Thus proving that the art of creating fine cuisine doesn't have to involve burning your eyebrows.

ALSO IN EAT & DRINK

  • Fully Tuned

With the current infatuation of the top chefs with traditional dishes, they'll serve you cannelloni like your mum made them, just better - and definitely pricier. But to me, it's still meat in pasta with cheese.

  • Intimate

Fermí Puig has decided to play it safe. At least the location of his new restaurant couldn't have come with better references.

  • Chilly Thoughts

This Italian chain is planning for world domination and, in spite of the close to freezing temperatures outside, will be taking on Starbucks using gelatos and fruit juices.

  • It's a Jungle In There

Cynics say that Asian restaurants in Barcelona need to spell out what kind of cuisine they're serving because, just by eating it, you wouldn't have the faintest idea. In Ly Leap's new restaurant on Muntaner, however, nothing's left to chance.

  • Dinner Chat

I'm a simple guy who just fancies the prospect of cutting out the useless small talk over dinner. What's the point of “my day was fine, too”, when you can go “hush, I can't hear what he's saying”?
