ONE-HIT WONDERS
Single-spirit bars boom
 
 
 
Molecular mixology, celebrity bartenders, low-cal cocktails… sometimes going for a drink can turn into a minefield of overcomplicated concepts. So what if you simply want to quench your thirst?

As always the drinks industry is just a step behind gastronomy, where picking one type of food - whether it’s burgers, BBQ or lobster - and doing it well has become du jour. But booze is catching up.

We’ve always been fans of the glamorous Artesian bar at The Langham where rum reigns and the high-tech ice never seems to melt. Likewise, we’re looking forward to the return of Frank’s Campari Bar to signal the start of summer (we’re in need of some rooftop action now the sun is shining). And don’t forget sherry at the city’s latest swarm of tapas joints (read: Bar Pepito, Capote y Toros, and of course, José).

But it’s Soho spots Mele e Pere and Ceviche that are taking the trend to new heights. The Italian trattoria recently opened with London’s first vermouth bar (including homemade versions and a constantly changing cocktail list) and the imminent launch of Ceviche on Frith Street will feature a bar serving nothing but Peruvian pisco (no cosmos or margaritas here!). So ask for a Soho Pisco (or three) and revel in going solo.
