If anyone attended Pret A Diner's Burlington Social Club last year at the Royal Academy of Arts, they'll know how Pret A Diner like to do things. Founded by catering and gastronomy mogul KP Kofler and neon artist Olivia Steele (her work is peppered throughout this weekend guide), the haute travelling experience turns fine dining on its head. They set up everywhere from Berlin, to Zurich, to Miami, in unique locations with stylised décor, interesting art, DJ nights and Michelin-standard cuisine. Needless to say that KP and Olivia have had their fair share of gin and tonics worldwide. Read on for their Ultimate G&T picks.

The Northern Spanish food frenzy is trending further North. This weekend, ex-Worship Street Whistling shop mixologist Ryan Chetiyawardana (aka Mr Lyan) is popping up for a three-day takeover in tapas bar Trangallán. Veer from the usual patatas bravas and instead enjoy dishes from the Galician region: marinated sardines, cherries gazpacho and scallop sashimi. Drinks wise, sip on inventive cocktails with far-flung ingredients such as matusalem, lapsang souchong and gomme, with lashings of sherry and whisky.   Now, let's go West for some hip hop. Going against the status quo and leaving the East End hip-hop trail for the Westside is Paradise at Notting Hill Arts Club. Featuring DJ Martelo (who was tour DJ for Santigold, opened for Jay-Z, 50 Cent and Destiny's Child) and Smutlee, who boasts a residency at Fabric. This is guaranteed to be a back-cap affair not seen since the days of Yoyo Thursdays. Hip hop to it!

I like to eat fish and chips with my G&Ts… good comfort food! UJ recommends Shoreditch's best-of-British Rivington Grill. It's all about the classic here – we love their beer-battered catch of the day with chunky chips, marrowfat mushy peas and tartar sauce. They have also just launched "The Perfect Serve" menu, a bible of different gins, including Bombay Sapphire. And, quite fittingly for our neon-heavy picks this weekend, there's artwork by Tracey Emin on the walls.

Now for some Southern comfort. The Lockhart, launched by four homesick, London-based Texans is open for its soft launch this weekend (with 50% off the bill until Sunday). After test-running their wares on Housebites to rave reviews, the quartet decided to go bricks and mortar, with a hearty, authentic, soul foody menu inspired by Texas, Louisiana and New Mexico but using local ingredients. Go for crab hush puppies, Louisiana crayfish etouffee, lobster nachos and fillet of buffalo with Oxford blue cheese grits. To drink? The mezcal, grapefruit, honey and ginger mix, otherwise known as Penicillin #2.   Opera traditionalists look away now. There seems to have been a shift in the classic art form. Last week, Azzedine Alaïa's costumes went on stage for The Marriage of Figaro at the Walt Disney Concert Hall in LA. Now, in London, we're also going Disney. Well, sort of. The Perfect American, based on the book by the same name by Peter Stephan Jungkt, opened this week. This isn't all sugary Disney World happiness though (Disney Corporation in fact denied the rights to use any characters or imagery), as Director Philip Glass portrays Walt as a racist, sexist, tyrannical megalomanic. There's also a cameo appearance from Andy Warhol.

OLIVIA'S ULTIMATE SUMMER EVENT

I can't think of anywhere better to drink a G&T this summer than in an Elizabethan church in Basel. Hot off the heels of their Zurich event last week, Olivia and KP are heading straight for Art Basel. Expect a Baz Luhrman-like vibe with Silencio and Maxology behind the music, and two Michelin-starred Tim Raue and Berlin's Ollysan taking the gastro-reins: the menu is Japanese-heavy featuring dishes like hamachi ceviche, miso black cod, sushi and white asparagus ice cream.

Grill spot Master & Servant is getting in on some brunch action (it's Manhattan-inspired after all). Come here on Saturdays and Sundays, nab a spot on the terrace and order from its simple but carefully selected menu: smoked tomato with Doddington cheese on toast, house sausage and fried duck egg and avocado on toast. For weekend morning refreshments, it has to be their Caeser, topped off with home-made clam juice and hot chipotle.   House of Hackney is opening its flagship this weekend. Expect a two-floor flowery emporium, designed by the architects behind the Hermès and Marc Jacobs stores. There'll be an in-house florist (Wild at Heart), haberdashery, fashion room and furtniture showroom, all punctuated with the label's irreverent, statement prints. We've got our eyes on the Palmeral print lampshades – very Club Tropicana.

If I were drinking G&T al fresco, it would have to be at Papaya Playa in Tulum with my friend Claus Sendlinger from Design Hotels. UJ recommends booking into a cabaña (or casita for more space), getting cosy in a hammock and trying out the hyperlocal cuisine at the restaurant.

Bombay Sapphire Masterclass with Sam Carter
 
 
 
Last Tuesday, 20 gin-thusiasts got together for a Bombay Sapphire Ultimate G&T showdown with mixologist Sam Carter. The group learnt everything from Bombay Sapphire's unique distillation process, to different types of gin, and how to chop a lime correctly. The best bit? The make-your-own G&T session, and the colourful infusions cupboard (we want one at home). If you like the sound of this, there will be three more G&T workshops every Tuesday until the end of the month.

PRET A DINER'S ULTIMATE G&T RECIPE
 
Bombay Sapphire Ultimate G&T Twist by Sam Carter
 
 
 
"Original indulgence can be found in the tastes of your childhood" – KP Kofler
"I have a very sweet tooth!" – Olivia Steele

Sam Carter combined the flavour preferences of both KP and Olivia and came up with a moorish, fruity and spicy mix perfect for the summer months.

Ingredients:
50ml Bombay Sapphire infused with a freshly slit vanilla pod for 24 hours
75ml Fever-Tree tonic water
25ml Fever-Tree ginger ale
1 blackberry

Garnish:
2 lime wheels (gently squeezed)
3 blackberries
Large sprig of basil leaves

Method for drink:
Squash a blackberry in the bottom of a clean, chilled Bombay Sapphire balloon glass and then add the vanilla infused Bombay Sapphire. Stir to incorporate. Fill 4/5ths full of good quality cubed ice and stir again. Top with 75ml Fever-Tree tonic water and 25ml ginger ale then stir gently for a final time. Garnish with a couple of lime wheels, 3 blackberries and a large sprig of basil. Enjoy!
