SMOKING HOT
 
Shall we smoke?
 
 
 
This year, it's all about stoking, coking and poking. The opening of Pitt Cue Co's first restaurant last year meant that BBQing was more than just a meaty trip to Bodean's. It's still going strong – Galvin Café A Vin has just launched Friday Urban BBQs with a Big Green Egg (NB: a brand of ceramic barbecue). The second wave is all about grilling, with Richard Caring's much-awaited Grillshack opening in September. At the moment, though, we're concerned with something a little smokier.
 
We first saw the fumes at Caravan with their Smoked, Pickled & Raw menu, and now the rest of London has caught alight. Char-obsessed Neil Rankin has turned up the heat with his latest venture Smokehouse, adding flavour to the menu via a wood and charcoal smoker, bespoke robata grill and a Big Green Egg (there it is again). Expect daily specials of lobster, rib racks and brisket ox cheek – basically, you name it, he'll smoke it.

Confirming the whispers, Salt Yard is opening a Basque and Italian-style smoke and grill restaurant on Berwick Street – think smoked oysters, salt-crusted sea bass and Iberico pork racks. Even the desserts get smoldered: smoked milk ice cream with pears in Moscato Rosa, anyone? Over in the hipster camp, Smokey Tails is giving Hackney Wick a taste of the fumes. Founded by Jo Vidler and Lyndell Sabine, and in collaboration with music makers Seth Troxler, Ryan Crosson and Ben Pound, this canal-side hideaway is a smoked meats pop up – think smoked wings, ribs and burgers (of the pulled pork, brioche bun variety).

Lastly, it's not just restaurants getting smoked. Harvey Nichols sells oak-smoked water and vodka, and Marks & Spencer is set to launch a range of smoked butters, salts and chocolate.

Forget the stovetop, we're going ashes to ashes.
