Rick Owens is lurking in the shadows of Redchurch Street. His latest pop up store, selling the wares of diffusion line DRKSHDW, is all about the darker side of life. The 200sqm store, coated in black paint (the shadier version of the Rick Owens' outpost in Mayfair) has the signature Owens' formula of minimal silhouettes, draped layers, soft fabrics and dark colours. And it's not just about the 9-5, rumour has it that Owens will be taking us after-hours with a planned London nightspot. Hands in the air for a London Spotlight.   Dark, dingy (esque) and underground – Coal Vaults is the latest restaurant to hit the streets of Soho. Nab a vault and tuck into sharing plates of contemporary British cuisine such as 'Pulled rabbit' with smoked black beans, sweetcorn and pineapple relish, lamb cooked in hay and lavender and, our favourite – the potted crab with home baked brown soda bread. And as this is cocktail heavy dining, expect your concoctions seasonal, infused and with some serious kick. The Four Leaf Club (gin, red plum, red clover, sugar, lemon and egg white) and New Rose (gin, cucumber, Dry vermouth and pink pepper), Maricastaña (Tequila, Agave, Tamarind and Mole Bitters) are top of our list.

Our interest in countercultures (thank you Club to Catwalk) has turned into an obsession with the latest exhibition by the ICA. Part of a series of off-site events, A Journey Through London Subculture: 1980s to Now, joins the dots between London's creative past and current talent. The retrospective is a collision of design, fashion and art that takes 60 of the most influential Londoners – Alexander McQueen, JW Anderson, and Giles Deacon (to name a few) – and gives us a 101 in the history of the capital's subcultures and countercultures.   Party organisers ReviveHER are back and celebrating their fourth birthday. Expect the usual crazy disco dancing antics, (if you came to our Tropicarnival party, you know what we mean) and, because it's their birthday, we suspect it's going to be a big one. Held in a loft in Hackney Wick, with New York disco-house dude Tim Sweeney and LA's soulful Lovefingers on decks and Chida & COS/MES from Tokyo's underground scene, this is set to shake the weekend.

The London Design Festival is giving us an endless staircase and making it a good thing. The installation created by dRMM Architects is the latest resident at the Tate Modern Bankside and it's a goodie. With a Thames panorama, this all wooden structure has 187 steps (if you take the long way up - do it), is endlessly reconfigured and, if you go at night, the stairs will be lit up by luminaires. Magic.   Sager + Wilde, our long lost vino pop up has gone permanent and taken up residence on Hackney Road, and it's one cosy affair. Think dark finishings, hanging German station bulbs with the piece de résistance - a cast-iron bar lit up by pavement lights. Expect rare wines by the glass, with up to 30 different selections served up everyday (old and new world), and, to keep you upright, choose from cured meats, cheeses, homemade pickles, tartines and grilled cheese sandwiches. And with a thumbs up from our friend the Winechap, we are there!

HOLLY'S ULTIMATE GIN & TONIC RECIPE
 
Quietly Confident Pink Lady Gin & Tonic Twist
 
 
 
Bombay Sapphire mixologist Sam Carter drew on Holly's love for clashing colour and flavour to come up with this mouthwatering Gin & Tonic Twist.

Ingredients:
50ml Bombay Sapphire (infused with a Pink Lady apple and cucumber peels)
100ml Fever-Tree Elderflower tonic water
2 lime wedges, squeezed
1/2 Pink Lady apple (finely chopped)
2 long cucumber peels

Garnish:
A few lime peel discs
Some lambs lettuce leaves
Julienne'd Pink Lady apple and cucumber

Method for infusion:
Take a bottle of Bombay Sapphire and pour out 50mls, replace with a small handful of finely chopped Pink Lady apples and a couple of long cucumber peels. Replace the cap, shake well and place in the fridge for 24 hours to infuse until ready for consumption.

Method for drink:
Take a clean, chilled Bombay Sapphire balloon glass and fill with good quality cubed ice. Squeeze in the juice of 2 lime wedges and then discard the whole fruit. Pour in the Pink Lady apple and cucumber-infused Bombay Sapphire, and stir to chill and mix. Gently pour in half a bottle Fever-Tree Elderflower tonic water and stir again briefly to combine. Finally, carefully arrange some julienne of Pink Lady apple and cucumber, a few lime peel discs and some freshly picked lambs lettuce leaves on top for the aroma.
