What's for Supper

 

Javanese Bandrek with Black Peppercorns and Ginger

Serves 4

Bandrek is a typical tea made and drunk in the highlands of the island of Java in Indonesia. It is warming and soothing on chilly nights and I love the way it fills my kitchen with the scent of cinnamon and ginger.

In warmer weather it can also be served cold over ice or with a splash of dark rum or brandy if it’s been a long day.

Ingredients

1 litre of water
one large piece of ginger root, peeled and sliced
2 one inch pieces of cinnamon bark or stick
1 tsp black peppercorns
3 tbsp palm sugar, grated

Instructions

Place all the ingredients in a large heavy pot and bring to a boil, stirring occasionally until the sugar has dissolved. Simmer for 20-25 minutes then remove from the heat. Ladle into tea mugs and sip slowly.
