Vietnamese Mojito

Makes 2 Drinks
This cocktail is a fun twist on a traditional Cuban mojito which is usually made with mint and sugar. Making a honey water solution is a useful bartender’s trick to get honey into a cocktail by diluting it half-half with hot water. This way the honey mixes properly into your drink instead of gooping at the bottom of your glass.
If you want to get serious about making cocktails, get yourself a wooden cocktail muddler. They look a little like rolling pins with a flat end and are great for crushing herbs and fruit in glasses.
Ingredients
1 lime, cut into chunks
1 stalk of lemongrass, finely minced
1-2 shots of dark rum
Ice cubes
Soda water
Honey water to taste
Honey Water
50 mls hot water
50 mls honey
Instructions
To make the honey water, combine the hot water and honey and whisk well in a teacup or small bowl until the honey is dissolved.
Place the limes and chopped lemongrass in the bottom of each glass and crush with a wooden spoon or a cocktail muddler. Pour over the rum and top up with soda water and ice cubes. Sweeten with the honey water to taste.
