What's for Supper

 

Pineapple, Passionfruit and Mint Punch

Makes one large pitcher

This cocktail is really fresh and delicious and looks really pretty in a frosty glass pitcher loaded with ice. I think this would be a welcome addition to a barbecue instead of one of those ubiquitous pitchers of rather sorry looking sangria piled with limp apple slices.

This is one of those times when it really is worth the effort of using fresh pineapple juice - it will make all the difference!

Ingredients

Juice of 3 limes
150 mls plain or vanilla-infused vodka
1 litre pineapple juice
pulp of 4 passionfruit
Leaves of 3 mint sprigs, shredded finely
Ice cubes
Soda water

Pineapple Juice

2 ripe pineapples, cut into small chunks

Instructions

To make the pineapple juice, puree some pineapple chunks in a food processor or blender and pass through a strainer with a bowl placed underneath to catch the juice.

Combine the lime juice, vodka, pineapple juice, passionfruit pulp, mint and ice cubes in a large pitcher. Top up with soda water. Serve well chilled.
