What's for Supper

 

Wholewheat Roti

Makes 8 flatbreads

The secret to making nice, flaky roti is butter and lots of it. The method of rolling and brushing the dough and rolling it up again works a layer of butter into the centre of the dough which melts and helps the roti turn crisp as they cook.

The mix of half white and half whole-wheat flour makes for a nice, chewy texture, perfect for scooping up curries with.

Ingredients

225 grams white flour
225 grams whole-wheat flour
1 tsp salt
300 mls warm water
200 grams melted butter

Instructions

Sift the flours into a large mixing bowl and add the salt. Stir to combine and make a well in the centre of the dry ingredients and pour in the water, stirring with a wooden spoon until the mixture comes together as a dough.

Place the dough on a lightly floured worksurface and knead for 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl and cover with a damp tea towel.
Set aside for an hour to rest.

Knead the dough again lightly and divide it into 8 portions. Roll each section of dough into a circle approximately 7 inches wide and brush with the melted butter. Taking one edge of the flatbread, roll it up like a jelly roll, then starting from the base of your jelly roll, roll it up again so that it looks like a snail. Repeat with the remaining portions of dough.

Squash each dough snail with your palm to flatten it and roll it into a 7 inch circle again.

Heat a heavy frying pan on medium-high heat. Brush the flatbreads with melted butter and fry them one or two at a time for 2 -3 minutes per side, brushing the opposite side with melted butter before turning. Press down on the flatbreads with a spatula a few times to ensure that they get nicely browned in patches. Continue until you have cooked all the flatbreads, covering with foil if necessary to keep them warm.

Serve hot.
