Makes 2 drinks

Finally, it is cool to drink Campari again. Wine bars all over Manhattan are serving up their version of an apero, a slightly bitter, citrusy cocktail based on everyone’s favourite 1970’s infusion, Campari.

Shaken with white wine, grapefruit and a touch of prosecco, Campari is finally back on the bartender’s catwalk where it belongs.

I knew it was only a matter of time...

Ingredients

Juice of 1/4 to 1/2 a ruby grapefruit
100 mls Campari
250 mls dry white wine, chilled
250 mls prosecco, chilled
Lots of ice

Instructions

Combine the grapefruit juice, Campari and wine in a cocktail shaker and shake well. Pour into large wine glasses full of ice and top up with the prosecco.

Stir with a swizzle stick and maybe put a little Blondie on for effect.
