Blueberry Lemonade
Makes one pitcher
If you are after a really elegant lemonade you could pass the blueberry puree through a strainer before adding the other ingredients to remove the skins, but I think drinking this and getting bits of blueberry skin stuck between your teeth is part of its charm.
Ingredients
65 mls honey
100 mls boiling water
250 grams blueberries
juice of 4 lemons
750 mls water
1 lemon sliced thin
Instructions
Combine the honey and boiling water and stir well to dissolve. Combine the blueberries and honey mixture in a blender and puree until smooth.
Place the blueberry puree in a large pitcher and stir in the lemon juice, water and lemon slices. Taste and add a little more honey dissolved in boiling water if desired.
Place in the fridge and chill well. Serve over ice.
