Scott's is an institution – and along with Zuma and C (ex-Cipriani) is consistently the most sought after destination for celebrities and those wishing to dine alongside them. The epitome of effortless sophistication, it’s hard to believe the original site was in that seedy tramp's alley next to the Trocadero. It may be a cliché to say that Kevin Lansdown is part of the furniture, but he is almost the longest standing employee of the group – beginning as a barman at Le Caprice in 1981, he then rose to head up The Ivy before taking over at Scott's when it re-opened in 2006.

What is the enduring appeal of Scott's?
It’s a new environment but with a great history – quintessentially English, it’s remembered by today's restaurant-goer as the choice of classic gentlemen like Ian Fleming. But today we also strike a balance of great produce and good value.

So what’s your favourite dish on the menu?
The Dressed Crab or the Fillet of Halibut – the texture of the fish is just so versatile for a number of dishes.

Is there anything new coming in for Spring? Any specials?
Our own Marinated Salmon with Grapefruit and Caviar has just come on. And of course the Razor Clams and Wild Boar Sausages are a must at any time of year.

Your top wine picks?
Our range of white Burgundies is known for being pretty special. And in terms of value, our champagnes – in particular the Jacquesson or independent growers like Larmandier Bernier and Egly-Ouriet – are excellent.

If I have no reservation, can I get a late booking? Otherwise, when’s the best time to try to get a walk in?
Always call on the day, as there will be cancellations and some of the waiting list will have made firmer reservations elsewhere. A seat at the bar is usually available after 9.30pm, and as we don’t pre-book the terrace there’s space there when it opens.

So, come on: what are the best tables?
(Kevin diplomatically indicates that all tables are very pleasant and cater for different requirements. WineChap on the other hand happens to think tables 8 and 51 are particularly 'money'. Also, up to 12 people can eat à la carte in the Private Room, if you are above celeb-watching.)
