Umami. The fifth taste. That strange, almost ethereal, not quite tangible flavour: savoury, earthy, meaty. We’ve all heard about it (we’ve all wondered if it really exists) but this culinary trend seems to finally be finding its feet.
It seems the drinks industry is always a step behind gastronomy, where picking one type of food – whether it’s burgers, BBQ or lobster – and doing it well has become du jour. But booze is finally catching up with a boom in single-spirit bars.
