Kanada-Ya is firmly a ramen-only affair, and not without reason. Our go-to tonkotsu specialists have a solid reputation for exceptional ramen, and when there’s bone broth simmering for 18 hours and noodles made on-site, you can bet there are plenty of details to obsess over. Now, the team have opened Machiya, their first non-ramen restaurant and bar. Instead of ramen, Machiya embraces traditional Japanese home cooking. Forget fancy, fussy dining; Machiya deals in no-nonsense homely food. We recommend picking a few dishes from each menu section (Izakaya, Yoshoku and Washoku, or bar snacks, Western-style and Japanese-style to you and I). Highlights include tender minced chicken skewers, fresh salmon with a touch of bittersweet daikon, and some seriously good soba. Make sure you visit the subterranean bar beforehand for a yuzu-kosho sour.
