Serves 4 Bandrek is a typical tea made and drunk in the highlands of the island of Java in Indonesia. It is warming and soothing on chilly nights and I love the way it fills my kitchen with the scent of cinnamon and ginger. |

In warmer weather it can also be served cold over ice or with a splash of dark rum or brandy if it’s been a long day. Ingredients Instructions Place all the ingredients in a large heavy pot and bring
to a boil, stirring occasionally until the sugar has dissolved. Simmer
for 20-25 minutes then remove from the heat. Ladle into tea mugs and
sip slowly. |
