For those who want a country stay with all the trimmings, book into the Lainston House, a five star 17th century manor house with all the fine country essentials, including a restaurant (AA Rosette), The Avenue, serving modern British cuisine such as smoked eel cannelloni with pomegranate and anchovies or pork served with gooseberries and carrot quinoa. Otherwise, there’s always UJ fave Lime Wood over in New Forest (a 45 minute drive from Laverstoke). Here you know the drill: rooftop gym (with incredible views), spa (10 treatment rooms ), and sexy décor (designed by David Collins). Finally, for a no-holds-barred option, the Four Seasons Hotel Hampshire ticks all the boxes. It’s close to Laverstoke, OTT with five-star plushness (indoor-outdoor pool, tennis courts, horse riding…), and is pooch friendly.

If, like us, you’ve been eagerly awaiting the opening of New York chef Seamus Mullen’s London restaurant, good news: the time has come. Sea Containers, part of the shiny new Mondrian Hotel on the Southbank has pulled out all the stops; from the Tom Dixon transatlantic interior (deep greens, curved paneled walls and brass features) to the carefully curated ‘farm-to-table’ menu–think slow cooked salmon, charred eggplant, and a dedicated raw section. Finish with cocktails at Dandelyan bar next door – we’ll be starting with the Puffed Grains and Chocolate (scotch, toasted grain soda, chocolate, curacao and pink peppercorns).   Bethnal Green is still going strong (we told you so), thanks to yet another cocktail opening, The Sun Tavern. Although it’s from the guys behind Discount Suit Company, the style here is different with an all day selection of bites: pastries, sandwiches, toasties and ‘pub grub’ for morning pit stops or heartier meals. Cocktail wise? The menu is more similar to DSC: pre-war cocktails and vintage punches, plus a stiff whiskey menu including Poitin, an Irish moonshine, for those so inclined.

Farm-to-table, seasonal, organic… if these buzz words of 2014 resonate then you'll want to get down to the Winchester Market, the largest farmer's markets in the country. Make like a Hemsley and bag up fresh ingredients, produce and cheese of every kind before stopping for lunch via the street vendors: buffalo burgers, salt beef sandwiches, fish cakes, hog roast… you get the picture. Dinner wise? Give the usual country roast a miss and instead dine at French institution Clos du Marquis and sample the provincial menu: think Pan fried foie gras with damson plums and snails in hollandaise. For something a bit more high-octane, River Cottage Canteen has just opened and Rick Stein is set to follow in the next few weeks. Make sure to reserve a table well in advance; we’re expecting good things.

Scott Hallsworth has brought a taste of his izakaya to the Royal Borough thanks to new speakeasy Ramusake. Owned by Piers Adam (Whisky Mist and Mahiki), the restaurant and bar may be based on an East Village underground lair but the food is strictly Japanese à la Kurobuta. Expect dishes such as beef fillet tataki and sea bass with shiso ponzu, all served with lashings of rum, cocktails, and, of course, sake.   Now, head to The Laundry and party with Neneh Cherry and Work It, the east London club kids known for their throwback nights. Pump up your Reeboks for a warehouse rave filled with R ‘n’ B classics, remixes and new jams. Aside from Cherry, DJs Martelo, Hannah Faith, Larry B and Blackfoot Phoenix will be on decks to channel some smooth hip-hop beats. Be quick, tickets are already on final release.

From experiencing the botanicals in the Heatherwick designed glasshouses and dry room to interactive workshops and master classes, the Bombay Sapphire Distillery at Laverstoke Mill isn’t just ‘another Distillery Tour’. Here it’s all about an interactive and sensory experience. Smell and taste each of the 10 botanicals that make up Bombay Sapphire, learn about the rich history of Laverstoke Mill and take a behind-the-scenes tour of the working still house. And when gin o’clock hits, pull up a seat in the Mill Bar for a cocktail on the water: the bar runs parallel to the beautiful River Test.

Gouda times lie ahead this Sunday, courtesy of the Castello pop-up store. Having toured New York, The Hague, and Copenhagen, it has now settled down for a seven-week stay in Shoreditch. The gallery of cheeses may be the main stars: from intense truffled whites and fun pineapple halos to the trendier ‘Noma’ inspired blocks (Hogelundgaard), but the deli-counter deserves a mention too. Build a hamper, peruse the accessories, talk to experts, and drink some wine… go (em)mental!   If last night’s warehouse rave left you feeling inspired, head to Hackney Picturehouse and watch Dancing Hackney. Directed by Hattie Worboys, the artist known for her immersive dance performances combined with film, sound and animation, expect four short films with one theme: bringing urbanites and young people together via dance and music. Make sure to stick around post-show as the kids on the silver screen take centre stage.

Want ‘activities’? We say country breaks are all about that ‘so fresh, so clean’ feeling, so once you’ve explored the Bombay Sapphire Distillery at Laverstoke Mill, head to New Forest, the best patch of grass in England due to its wildlife – ponies, donkeys and deer are the usual suspects. Alternatively, head to the River Test for some fly fishing (Four Seasons Hotel Hampshire can help you out equipment wise). Try the Southampton City Art Gallery for a culture fix and, of course – Downton Abbey’s Highclere Castle, because well, it’s Downton Abbey.

The Bombay Sapphire ‘Laverstoke' was created to celebrate the opening of the Bombay Sapphire Distillery at Laverstoke Mill in Hampshire. It incorporates all the elements one would expect within a celebratory gin cocktail: citrusy, floral, rooty, spicy and of course piney. All in all, an easy to make cocktail perfect for replicating at home. Enjoy!

Ingredients:
50ml Bombay Sapphire, 15ml Martini Bianco - Dry / Rosato or Rosso, 10ml Bottlegreen elderflower cordial, 100ml Fever-Tree ginger ale, and good quality cubed ice.

Garnish:
2 squeezed lime wedges, 2 slithers of fresh ginger, and a large mint sprig. All grouped together on one side of the glass.

Method:
Pour the Bombay Sapphire, chosen Vermouth and elderflower cordial into a clean copa balloon glass. Stir or swill to mix. Squeeze and drop in a freshly cut lime wedge. Swill again briefly. Add plenty of cubed ice and stir to chill. Finally, pour 100ml of Fever-Tree ginger ale over the ice and gently stir the cocktail.
