Pomegranate Basil Martini
Makes 2 Martinis
This cocktail is a great example of how fruit and herbs can make for unlikely partners and if you hurry you can just catch the end of pomegranate season. I have a piller in my house that is splattered with the remains of several sessions of pomegranate juicing. There doesn’t seem to be any tidy way of doing it. I follow the lead of the juice bars in Istanbul and slice my pomegranates in half and put them in a clamp-down citrus juicer. Be prepared to need a clean t-shirt afterwards!
Ingredients
60 ml ordinary or citrus flavoured vodka
2 tbsp fresh lemon juice
Juice of 1 large pomegranate
A handful of fresh basil leaves, torn into shreds
Pomegranate seeds for garnish
Instructions
To make the martini, shake all ingredients well in a cocktail shaker with ice and strain into a chilled martini glass. Sprinkle a few pomegranate seeds into each glass as a garnish. Serve.
