What's for Supper

 

Flour Tortillas

 

Makes approximately 8 tortillas

I’m usually pretty hardcore in how I cook, but sometimes in the interest of health I make a few concessions. These tortillas would usually be made with lard which would be grated and worked into the dough. I’ve substituted a little oil instead and also add a drizzle of oil to the pan when I cook them to make them golden.

If you have only ever had supermarket tortillas – this is tortilla nirvana!

Ingredients

230 grams flour
1 ½ tsp baking powder
1 tsp salt
185 mls whole milk, warmed to just above room temperature
2 tsp vegetable oil

Extra flour for kneading
Vegetable oil for cooking the tortillas

Instructions

Place the flour, baking powder, and salt in a large mixing bowl and stir to combine. Make a well in the centre and slowly pour in the warm milk and oil, stirring as you add it until it comes together as a loose, sticky dough.

With floured hands,  turn the dough out onto a floured work surface and knead vigorously for 3-4 minutes, adding a sprinkle of flour as needed until the dough is smooth and elastic.

Place the dough in a lightly oiled bowl and cover with cling film or a damp tea towel and leave to rest for 30 minutes.

Break the dough into 8 pieces and roll the dough lightly in some flour, shaping them into balls. Cover the balls again with cling film or a damp tea towel and leave to rest for 10 minutes.

Roll each dough ball out into a round thin circle about 7-8 inches in diameter. Place a sheet of parchment between each rolled sheet of dough to keep them from sticking together and continue until you have rolled out all the dough.

Heat a frying pan on high heat and brush it lightly with a  little oil. Add a tortilla and cook it for 30-45 seconds per side until slightly puffed up and lightly golden. Cover the cooked tortillas with foil to keep them warm while you cook them all. Serve warm.
