Nothing Wasted

Forget paying lip service to green credentials - sustainability is finally getting its cool on

After launching the world’s first ‘no perishables’ bar White Lyan, we suspected Ryan Chetiyawardana would continue raising the stakes in the luxe-yet-sustainable game. LVMH, Belvedere and Krug might not be names you’d expect to see alongside zero waste, but at his new venture Cub, it’s about combining a luxe feel with sustainable methods. And it’s not just the foodie world that’s going eco – the travel industry is at it, too.

At 1 Hotels South Beach Miami, CEO Barry Sternlicht calls it “the luxury of enough”, and he’s thought of everything, from motion sensors to fleets of electric Tesla cars and eco-friendly dry cleaning (see our review of his new 1 Hotel Brooklyn Bridge outpost below). There are 12 new 1 Hotels in the pipeline worldwide, so you may not have to travel far to sample an ultra-green night’s sleep.

And if, like us, you were following London Fashion Week last week over Instagram, you may have seen the #PositiveFashion hashtag popping up – you weren’t alone. Vivienne Westwood and Adwoa Aboah have teamed up with the British Fashion Council to promote fashion brands and businesses switching to green energy suppliers, using little steps that count towards the biggest impact. Look good, do good.

From zero-waste to hashtag activism, it’s time to go green.

Ceremony

A haven for the accidental vegetarian

Ceremony hails from impressive stock (Milk and Honey and London Beer Week), which will come in handy as they set about smashing all those British vegetarian preconceptions. They’ll be focusing on excellent food and good times that just happen to be meat-free, and yes, there will be brunch.

The Weekend

If you already have plans this weekend, cancel them: New York’s Dante (one of the world’s best bars) is in town for just five days. A visit for aperitivo hour won’t take the whole weekend though, so make some time for a Friday AM pork belly sandwich from Magpie’s new menu and a Sunday seeing the Design Museum’s California exhibition – just two weeks left!

Dan Graham

As the executive chef Hackney’s Michelin-starred Pidgin and new sister restaurant Magpie, Dan Graham knows a thing or two about dining in London. We found out his foodie faves.

What’s your all-time favourite restaurant in London?
It’s hard to have a favourite restaurant in London, but the last restaurant I really enjoyed was Street XO.

Where do you go when you want to celebrate?
I like to make a trip somewhere. For my 30th I went to L’enclume and it felt very special.

What do you cook on a night in?
My girlfriend is in charge of what gets cooked at home – I’m just on chopping duty! It’s usually something like a tagine or a stir fry.

What’s your local?
The Albion. It feels like a country pub.

Tell us one thing you can’t live without right now.
Music.

Som Saa Cook Bangkok

The Som Saa boys pay homage to Thailand’s vibrant capital

On the 9th October, Andy Oliver and Mark Dobbie will be joined in the Som Saa kitchen by author Leela Punyaratabandhu to create a Thai sharing feast for one night only. The trio will be cooking recipes from Punyaratabandhu’s new book Bangkok – think classics like aged beef green curry, Thai fried chicken and sweet mango sundae. Get booking.
