Kompot ‘Russian Fruit Punch’
Kompot is what you will want to serve to your new mother in law and to Dasha and her art world friends when they come calling.
Ingredients
1.25 litres of water
110 grams of sugar (or more to taste)
10 plums, pitted and quartered
2 apples, cored, peeled and cut into small chunks
6 cloves
a 2 inch piece of cinnamon bark or stick
1 punnet black currants or red currants
1 lemon
Instructions
Place the water, sugar, plums, apples and spices in a large pot and bring to a simmer, stirring frequently until the sugar has dissolved.
Reduce the heat to a gentle simmer and cook for 10 minutes or until the apples and plums are nearly soft. Add the currants and simmer for a further 5 minutes. Remove from the heat and set aside to cool slightly.
Taste the kompot and add more sugar or a little lemon juice to taste. Then place the kompot in the fridge and chill well.
To serve, spoon a little fruit into glasses or tea cups and ladle over the liquid. Serve with spoons.
