CEO of Hide and Hedonism Wines

From launching the renowned Hedonism Wines in 2012 to being involved in Hide, the Michelin-starred restaurant and bar by Ollie Dabbous and Hedonism Wines, it’s safe to say Tatiana is a leader in wine. We caught up with her about all things vino. If you haven’t been to Hide yet, they have a new à la carte menu being served at Hide Above (which was tasting menu only before), so the time is now.

For restaurants…I love Endo at Rotunda – it’s simply the best sushi I have ever eaten, the whole experience is flawless and incredibly special. Kiln is my casual favourite. The atmosphere is great and the food is delicious and fun. I love sitting at the counter watching the dishes being cooked on the open fire. You immediately forget you are in London.

To celebrate, to me nothing is more befitting for a special occasion than one of our tables at Hide Above overlooking Green Park, accompanied by some fabulous food and an unparalleled champagne list.

For bars, I am more of a cocktail bar person than a wine bar person. Bar Termini is my long standing favourite. A very concise and classic cocktail list, charming bartenders and the full illusion you are having a drink before catching a train to Rome.

When buying wine, without a doubt there is no wine shopping experience like Hedonism Wines – it simply pulls all the stops. I’ve always also enjoyed a Sampler concept though, and Enomatic tasting machines have made a huge difference in how accessible certain finer wines have become.

This year I hope to get to Portugal. They produce so many amazing whites and reds there apart from the world-famous port. I love surfing, so I will also try to incorporate it on this trip too.

With my job, I love that no day is the same as both businesses are still growing very fast. I also find it very gratifying that both brands are essentially based around making people happy.

I’d tell my younger self to delegate and trust your intuition more. Both skills are absolutely crucial in this business, but very few people have them when they are starting out.

Any other news? We might be opening another one of the much-loved “Hideaway” concepts this year. Something casual with amazing coffee and delicious viennoiserie. There some incredible wine dinners in the pipeline too.
