 Seems like times are a changing though. If you've been to as many cocktail bars as we have lately, you'll know there's a little bit of a top tier absinthe movement going on; this fairy is all grown up and has glitzy bars, bottles and patrons to match. 
The new absinthe-dedicated basement bar at Brompton Bar & Grill offers the traditional set-up, sure – a fountain dripping water through sugar cubes suspended over the drink – but it also does cocktails, including the lethal, champagne-soaked Death in the Afternoon. 
It was Rebel Dining Society’s absinthe-themed summer series – think jellies and cocktails spiked with nutmeg and créme de pêche – that gave us a taste for the spirit. Luckily it’s on the latest menu at Happiness Forgets, Hoxton’s new-ish basement speakeasy, which rotates its list every fortnight. Get down there, and try a Green Beast, made with absinthe, lime juice and cucumber 
And if you’re looking to stock your own liquor cabinet with the stuff, may we suggest the super-stylish La Maison Fontaine. Recently awarded a design award and stocked by Nobu, we're  planning to mix it with gin, lime, pink grapefruit juice and syrup. 
So, the green fairy’s back – she’s just a little better dressed now.
