Named after Charles Fitzroy Doll, the designer of The Prinicipal’s original guise in 1898, Fitz’s is the hotel’s two-room cocktail bar. Designed by Russell Sage, Fitz’s interiors might hark back to the past (glitter balls, original stained glass windows, antique rugs and velvet seaters), but the cocktail menu, devised by Robbie Bargh (Gorgeous Group) and Sean Fennelly (Mik & Honey) is entirely modern. Vesca Negronis (incorporating Ford’s gin, aloe and coconut) and Golden Echos (pear brandy, toasted sesame and pimento bitters) sound like an ideal way to put an end to the day, as do the bar snacks, split into “one bite” and “two bites” – those bone marrow croquettes will do nicely. Playlists are compiled by Double Dutch Records, and remember to ask the bar when the next performances are – jazz trios, burlesque, comedians and beat poets are all booked in.
