Sushi, sashimi and sake in chic surroundings.

Said to be one of the best Japanese restaurants in the world, Tojo's bright and airy space is not to be missed during any trip to the Pacific Northwest. The styling is very zen-chic with blue banquettes and plenty of plant life, whilst the performing chefs in the open kitchen play to a prosperous crowd. Try any of the Temaki selection of 'sushi in a cone' like the Magnum P.I.- apparently Tom's favourite and made with crab, sweet shrimp and geoduck. And this being one of the 'most beautiful places on earth', you wouldn't get away without a restaurant pulling on its surroundings for edible inspiration - here, try the Northern Light Roll with wild prawn tempura, avocado and seasonal fruit rolled in a cucumber crepe. The Canadian Sablefish with Tojo's secret marinade is also divine, washed down with, what else, sake.
